Classic French Confit Pot is their typical gorgeous light mustard glaze. First utilized in 19th century French Country kitchens to preserve their food and in particular the fatty meats, like duck confit and goose. The word "confit" derives from the French verb confire, simply meaning "to preserve". The Country French Confit pots were glazed around the top and unglazed on the bottom half, so that they could be covered in a cloth fabric and buried either in the ground up to the glaze line, or in a cold cellar.
